Nutty whole wheat berries pair with sweet-tart cherries, celery, scallion, parsley, toasted pecans, and a cider-Dijon vinaigrette in a sturdy make-ahead salad.

- 1 1/2 cups (285 g) wheat berries, rinsed
- 5 cups (1.2 L) water
- 1 teaspoon fine sea salt, divided
- 1 cup (140 g) pitted fresh cherries, quartered, pitted and quartered
- 2 celery ribs, finely sliced
- 4 scallions, sliced
- 1/2 cup chopped parsley
- 1/2 cup (55 g) toasted pecans, chopped
- 1/4 cup (60 ml) extra-virgin olive oil
- 3 tablespoons (45 ml) apple cider vinegar
- 1 tablespoon Dijon mustard
- 2 teaspoons honey
- Black pepper
Directions
Method
- Simmer wheat berries in water with 1/2 teaspoon salt 45 to 70 minutes, until chewy-tender. Drain thoroughly and cool 10 minutes.
- Whisk oil, vinegar, Dijon, honey, remaining salt, and pepper. Toss with warm wheat berries.
- When nearly cool, fold in cherries, celery, scallions, parsley, and pecans.
