Watermelon, Feta & Mint Salad
Cold sweet watermelon, salty feta, mint, and lime need very little interference. Draining cut melon briefly prevents a watery platter; dressing at the last moment preserves clean textures.

- 6 cups (900 g) seedless watermelon, cut into 1-inch cubes and chilled
- 6 ounces (170 g) feta, broken into large crumbs
- 1/3 cup loosely packed mint leaves
- 2 tablespoons (30 ml) fresh lime juice
- 2 tablespoons (30 ml) extra-virgin olive oil
- 1/4 small red onion, very thinly sliced
- 1/4 teaspoon Aleppo pepper
- Flaky salt, only if needed
Directions
Method
- Drain watermelon in a colander 10 minutes. Whisk lime, oil, and Aleppo pepper.
- Arrange melon and onion on a cold platter. Spoon over dressing; add feta and mint.
- Fold once, taste, and add salt only if the feta is mild. Serve immediately.
