Sticky Honey-Garlic Pork Chops

Ingredients
Pork
- 4 boneless center-cut pork loin chops, 1 inch thick, unenhanced with added solution; pat dry
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon neutral oil
Honey-Garlic Glaze
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 1/2 tablespoons apple cider vinegar
- 2 tablespoons water
- 4 garlic cloves, finely grated
- 1 tablespoon unsalted butter
Directions
Sear the Chops
- Use pork chops that are not enhanced with added salt solution. Season the pork chops all over with three-quarters of the kosher salt and the black pepper; reserve the remaining salt. Let them stand while the skillet heats, about 10 minutes.
- Heat the neutral oil in a large skillet over medium-high. Sear the chops without moving until deeply browned, 3 to 4 minutes; turn and cook 2 to 3 minutes more, until the centers reach 140°F. Transfer to a plate.
Build the Glaze
- Whisk the honey, soy sauce, cider vinegar, and water. Reduce the skillet to medium-low, add the garlic, and stir for 30 seconds without browning.
- Pour in the honey mixture and simmer for 2 to 3 minutes, scraping up the fond, until glossy but still fluid. Whisk in the butter. Return the chops and collected juices; turn for 1 minute until glazed and at least 145°F.
Rest and Serve
- Rest the glazed chops off heat for at least 3 minutes. Taste the glaze and add only as much reserved salt as needed, turn the chops once in the warm glaze, then serve with the sauce spooned over the top.
