Sesame-Ginger Chicken & Cabbage Salad
Crunchy cabbage and tender chicken tossed in a bright sesame-ginger dressing and finished with roasted peanuts.

- 1 large carrot, coarsely grated
- 4 scallions, thinly sliced
- 1/3 cup, roughly chopped

Directions
Method
- Whisk rice vinegar, soy sauce, toasted sesame oil, neutral oil, honey, ginger, and lime juice together until the honey is incorporated.
- Toss green cabbage and carrot with two-thirds of the dressing. Massage briefly, just until the cabbage becomes slightly pliable.
- Add cooked chicken and scallions, then toss thoroughly with the remaining dressing.
- Let the salad rest for 5 minutes, then finish with roasted peanuts. Serve while the cabbage still retains its crunch.
