Pistachio-Kataifi Dubai Chocolate Bars
Snappy milk-chocolate shells enclose a thick filling of butter-toasted kataifi, sweet pistachio cream, tahini, and salt in this Dubai-born contemporary confection.

Ingredients
Crisp Pistachio Filling
- 5 ounces thawed kataifi dough, cut into 1-inch strands
- 3 tablespoons unsalted butter
- 1 cup sweet pistachio cream
- 2 tablespoons tahini
- 1/4 teaspoon kosher salt
Chocolate Shell
- 24 ounces couverture milk chocolate, finely chopped, The quantity includes deliberate tempering and molding overage; not all of it remains in the finished bars.
Directions
Toast the Kataifi
- Melt the unsalted butter in a wide skillet over medium-low heat. Add the kataifi dough and cook for 10–12 minutes, turning and separating constantly, until uniformly deep golden and crisp. Spread on a tray and cool completely.
- Fold the cool kataifi with the pistachio cream, tahini, and kosher salt. The mixture should hold together while retaining visible crisp strands.
Temper and Form the Shells
- Check the milk couverture package and use its tempering curve when provided. Otherwise, melt two-thirds of the milk chocolate over barely simmering water to 113 to 115°F / 45 to 46°C. Remove from heat, add the remaining chocolate, and stir until cooled to 80 to 81°F / 27°C; warm gently to 84 to 86°F / 29 to 30°C.
- Spread a thin smear on parchment and wait 3 to 5 minutes; proceed only when it sets firm, even, and streak-free. Spoon chocolate into clean dry bar molds, tap out bubbles, and invert to drain excess back into the bowl. Scrape the mold clean, keep the recovered chocolate within the package working range, and let the shells begin to set for 10 minutes. Use three dry {{tool:chocolate-bar-mold|6-by-3-by-1-inch molds, approximately 295 ml each}}.
Fill, Cap, and Set
- Divide the filling among three molds, about 6 ounces / 170 g each. Press it into an even layer, keeping it at least 1/8 inch / 3 mm below the top and leaving the chocolate rim completely clean. Spoon the working-temperature chocolate over each mold to cover the filling and meet the exposed shell on every side; tap gently to release bubbles, scrape the tops flush, and verify that each cap forms an unbroken seal with the shell. Set for 60 to 90 minutes.
- Unmold three 11- to 12-ounce / 315- to 340-g bars; cut each into four servings. The 24-ounce / 680-g chocolate quantity intentionally includes molding overage; based on the stated finished-bar and filling weights, expect about 6 to 8 1/2 ounces / 170 to 245 g tempered chocolate to remain. Spread that surplus thinly on clean parchment, let it set, break it into pieces, and store it airtight in the same cool, dry conditions for later remelting.
