Ingredients
Colada
- 2 cups frozen pineapple chunks
- 1 cup chilled pineapple juice
- 1/2 cup unsweetened coconut cream, stirred smooth
- 2 tablespoons granulated sugar
- 2 tablespoons hot water
- 1 tablespoon fresh lime juice
- a small pinch Diamond Crystal kosher salt
- 1 cup ice cubes
Garnish
- 2 slim fresh pineapple wedges
Directions
Dissolve the Sweetener
- Stir the sugar into the hot water until clear, then cool for 5 minutes.
Emulsify the Coconut
- Blend the syrup with the pineapple juice, coconut cream, lime juice, and salt for 15 seconds until fully smooth.
Blend the Colada
- Add the frozen pineapple and ice. Pulse to break them up, then blend on high for 35-45 seconds until creamy and pourable.
- Divide between two chilled glasses, garnish with the pineapple wedges, and serve while the frozen texture is thick enough to mound briefly in the glass.
