Overnight Cold Brew Concentrate
A clean, chocolate-toned cold brew concentrate steeped overnight from coarse coffee, then filtered slowly and diluted over ice for a smooth, balanced glass.

Ingredients
Cold Brew Concentrate
- 8 1/2 ounces whole coffee beans, coarsely ground, similar to coarse sea salt
- 5 cups cold filtered water
To Serve
- 3 cups cold filtered water, or to taste
- 3 cups ice
Directions
Steep the Coffee
- Combine the coarsely ground coffee and cold filtered water in a clean 3-quart or larger glass jar. Stir only until no dry pockets remain, cover, and refrigerate for 12 hours.
Filter the Concentrate
- Pour the brew through the fine-mesh sieve into a clean container, allowing it to drain without pressing. Rinse the sieve, line it with a rinsed paper coffee filter, and set it over a second clean container. Pass the concentrate through the lined sieve without overfilling the filter, replacing the paper if flow stops, until no visible sludge settles immediately; expect about 3 cups concentrate.
Dilute and Serve
- For each glass, fill generously with ice, then combine 1/2 cup concentrate with 1/2 cup cold filtered water, or dilute to taste. Stir, taste, and add a small splash more water if the roast feels heavy. Refrigerate remaining concentrate for up to 72 hours.
