Mojito
Fresh mint perfumes rather than muddies this tall rum drink. Pressing it gently with syrup releases aroma without extracting harsh vegetal flavors.

- 10 fresh mint leaves, plus a sprig
- 3/4 ounce (22 ml) fresh lime juice
- 1/2 ounce (15 ml) simple syrup
- 2 ounces (60 ml) white rum
- 2 ounces (60 ml) chilled soda water

Method
- In a highball, gently press mint with lime and syrup 3 or 4 times using the end of a wooden spoon; do not shred it.
- Add rum and crushed ice. Churn with a spoon until cold, top with soda, and add more crushed ice.
- Clap the mint sprig between your palms and garnish.
