Mango Lassi
Ripe mango, plain whole-milk yogurt, and cold milk blended with cardamom and a pinch of salt into a thick but pourable Indian lassi.

Ingredients
Lassi
- 3 cups chilled ripe mango cubes
- 2 cups chilled plain whole-milk yogurt
- 3/4 cup chilled whole milk
- 2 tablespoons granulated sugar, plus more if needed
- 1/4 teaspoon ground cardamom
- a small pinch Diamond Crystal kosher salt
Directions
Prepare the Fruit
- Taste the mango before blending. It should be fully ripe, floral, and free of stringy flesh; chill the cubes if they are not already cold.
Blend the Lassi
- Add the yogurt and whole milk to the blender, followed by the mango, granulated sugar, cardamom, and kosher salt. Blend on high for 45 seconds until completely smooth.
Adjust and Pour
- Taste cold. Add sugar 1 teaspoon at a time only if the mango needs it, or 1 to 2 tablespoons milk if the lassi is too thick to pour. Blend 10 seconds more and serve in four chilled glasses while the lassi is still thick and thoroughly cold.
