Brazilian limonada suíça flashes whole lime pieces with ice water, then strains and blends with condensed milk for a creamy, vividly tart drink.

Ingredients
Lime Extraction
- 4 small thin-skinned limes; leave 1 unpeeled and peel 3, scrubbed; retain colored peel on one lime, remove colored peel and white pith from three, then quarter and remove seeds
- 3 cups ice-cold water
Creamy Finish
- 1/2 cup sweetened condensed milk
- 2 cups ice, plus more for glasses
Directions
Prepare the Limes
- Scrub all four limes. Leave one small thin-skinned lime unpeeled. Remove the colored peel and all accessible white pith from the other three. Trim the ends, quarter every lime lengthwise, remove firm white center ribs and visible seeds, and work promptly once cut.
Pulse and Strain
- Add the lime pieces and ice-cold water to the blender. Pulse exactly 5 to 6 one-second pulses, just until the flesh is broken. Immediately strain through a fine-mesh sieve into a clean pitcher; let it drain without pressing or rubbing the peel.
Blend and Serve
- Return the strained liquid to the clean blender with the sweetened condensed milk and ice. Blend for 10 to 15 seconds until frothy and fluid. Taste once for balance, divide over fresh ice, and serve before dilution and peel bitterness become noticeable.
