Italian Sausage & White Bean Skillet
Browned Italian-style sausage, creamy white beans, tomatoes, and tender spinach come together in a bright one-pan dinner.

Ingredients
Skillet
- 12 oz, mild Italian-style, casings removed
- 1 tbsp
- 1 small onion, diced
- 3 cloves, finely minced
- 1 (14.5-oz) can, with juices
- 2 (15-oz) cans, rinsed and drained
- 1/2 cup
- 1/2 tsp
- 5 oz, baby spinach
- 1/2 tsp, Diamond Crystal, plus more to taste
- 1 tbsp, freshly squeezed
Directions
Brown the Sausage
- Heat extra virgin olive oil in a large skillet over medium-high heat. Add mild fresh pork sausage in rough 1-inch clumps and leave them undisturbed until browned underneath, then turn and cook until browned and the centers reach 160°F (71°C), 5–6 minutes total. Transfer the sausage to a plate; spoon off excess fat, leaving about 1 tablespoon in the skillet.
Build the Skillet
- Reduce the heat to medium. Add yellow onion and cook, stirring occasionally, until softened, 3–4 minutes. Stir in garlic and dried oregano and cook until fragrant, about 30 seconds.
- Add diced tomatoes with their juices, cannellini beans, low sodium chicken stock, and kosher salt. Mash about 1/2 cup of the beans against the skillet, leaving the remainder whole. Bring to a gentle simmer and cook, stirring occasionally, until the liquid lightly coats the beans, 4–5 minutes.
Finish
- Return the sausage and any accumulated juices to the skillet. Fold in fresh spinach by handfuls and cook just until wilted, 1–2 minutes. Remove from the heat, stir in lemon juice, taste for salt, and serve.
