Hamburger Steaks with Onion Gravy
Loosely formed ground-beef steaks develop a dark skillet crust, then finish in a glossy onion gravy seasoned with Worcestershire, thyme, and black pepper.

Ingredients
Hamburger Steaks
- 1 1/2 pounds 85% lean ground beef
- 1/4 cup panko breadcrumbs
- 1 large egg, lightly beaten
- 2 teaspoons Worcestershire sauce
- 1 1/4 teaspoons kosher salt, divided: 1 teaspoon (3 g) for the patties and 1/4 teaspoon (0.8 g) for the onions
- 1/2 teaspoon black pepper
- 1 tablespoon neutral oil
Onion Gravy
- 2 large yellow onions, halved and sliced 1/4 inch (6 mm) thick
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups low-sodium beef stock
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon dried thyme
Directions
Shape and Sear
- Gently combine beef, panko, egg, Worcestershire, 1 teaspoon (3 g) of the salt, and pepper only until distributed. Shape four 3/4-inch-thick (2 cm) oval steaks and press a shallow indentation in each center.
- Heat oil in a large skillet over medium-high. Sear patties until a deep crust forms, 3 to 4 minutes per side; transfer to a plate before they are fully cooked.
Build the Onion Gravy
- Lower heat to medium and melt butter. Add onions with the remaining 1/4 teaspoon (0.8 g) salt; cook, stirring and scraping fond, until soft and deeply golden, 18 to 25 minutes. Let deep golden color and complete softness, not the clock, determine doneness; add a tablespoon of water if the fond threatens to scorch.
- Sprinkle flour over onions and cook 1 minute. Whisk in stock gradually, then Worcestershire and thyme. Simmer until lightly thickened, 3 minutes.
Smother and Finish
- Return patties and juices to the gravy. Simmer gently, turning once, until their centers reach 160°F (71°C), 5 to 8 minutes.
- Rest off heat for 5 minutes. Taste the gravy for salt and spoon onions over each steak while leaving some browned surface visible.
