Classic American Cheeseburger

- 1 1/2 lb freshly ground beef chuck, 80 percent lean
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 4 soft potato buns, split
- 2 tbsp unsalted butter, softened
- 4 slices American cheese
- 1/4 cup white onion, finely diced
- 8 dill pickle chips, sliced into chips
- 4 lettuce leaves
- 4 tomato slices, thinly sliced
Directions
Shape, Grill, and Assemble
- Divide ground beef into 4 loose 6 oz portions and shape into 3/4-inch thick patties, handling lightly. Press a shallow dimple into each center and chill for 30 minutes.
- Heat a charcoal or gas grill to medium-high. Spread unsalted butter on soft potato buns and toast until golden, 1-2 minutes.
- Season the patties with kosher salt and black pepper just before cooking.
- Grill the patties until deeply browned, about 3 minutes. Flip, top with american cheese, and cook until the beef reaches 160F, 2-4 minutes more.
- Rest the patties for 3 minutes. Assemble on the toasted buns with white onion, dill pickles, lettuce leaves, and tomato.
