Skillet Grilled Cheese with Cheddar and American
A deeply golden skillet sandwich combining sharp cheddar flavor with American cheese melt, cooked slowly under a lid so the center turns fluid before the bread grows dark.

Ingredients
Sandwiches
- 4 slices firm white sandwich bread
- 2 tablespoons unsalted butter, softened
- 1 teaspoon Dijon mustard
- 3 ounces sharp cheddar, coarsely grated
- 2 slices American cheese
Directions
Build the Sandwiches
- Spread one side of each bread slice with a thin edge-to-edge coat of the butter. Turn buttered sides down and spread the inner faces lightly with the Dijon.
- Divide half the cheddar over two slices, add one slice of American cheese to each, then cover with remaining cheddar. Close with the buttered sides facing out.
Griddle Slowly
- Place the sandwiches in a cool skillet and set over medium-low heat. Cover and cook for 4 to 5 minutes until the undersides are evenly golden and the cheese has begun to slump.
- Flip with a wide spatula, uncover, and cook for 3 to 4 minutes until the second sides are golden and the cheese is fully melted. Reduce the heat if the bread darkens before the center loosens.
Rest and Cut
- Move to a cutting board and rest for 2 minutes. Cut diagonally with a serrated knife and serve while the center remains molten.
