Frothy Orange Julius-Style Drink
Frozen orange juice, whole milk, vanilla, and pasteurized egg white blend into a pale, finely foamed, creamier home interpretation of the American soda-stand drink.

Ingredients
Orange Base
- 3/4 cup frozen orange juice concentrate, partially thawed
- 1 1/4 cups very cold whole milk
- 3/4 cup very cold water
- 3 tablespoons nonfat dry milk powder
- 3 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons pasteurized liquid egg white, from a carton, not raw shell egg
Directions
Build the Orange Base
- Add the orange juice concentrate, whole milk, water, dry milk powder, sugar, vanilla, and pasteurized liquid egg white to the blender.
- Blend on medium for 20 seconds. Stop and scrape down any dry milk clinging above the liquid, then blend until completely smooth.
Crush and Aerate
- Add half of the ice and pulse until broken into small pieces. Add the remaining ice.
- Blend on high for 25 to 35 seconds, until the drink moves as one pale-orange vortex and a fine foam rises across the surface. Stop before it becomes thin.
Pour Immediately
- Divide among four chilled tall glasses, pouring from a low height to preserve the fine foam.
- Serve at once. Because the drink contains dairy and egg white, discard a batch held at room temperature for more than 2 hours, or more than 1 hour when the temperature is above 90°F (32°C).
