Currywurst
Berlin street-cart sausage browned and sliced under glossy spiced tomato sauce with a sharp dusting of curry powder.

- 4 whole bratwurst or fine pork bockwurst sausages
- 1 tbsp avocado oil
- 1 whole yellow onion, finely grated
- 1 tbsp tomato paste
- 1 tbsp curry powder, plus more for serving
- 1 cup tomato puree
- 1/4 cup ketchup
- 2 tbsp apple cider vinegar
- 1 tbsp worcestershire sauce
- 2 tsp granulated sugar
- 1/2 tsp kosher salt
- 1/4 tsp cayenne pepper

Method
- Heat the avocado oil in a saucepan. Cook the finely grated onion until softened and no longer raw, about 4 minutes.
- Add the tomato paste and curry powder. Cook until the paste darkens slightly and the curry smells fragrant, 1 minute.
- Add the tomato puree, ketchup, vinegar, Worcestershire sauce, sugar, salt, and cayenne. Simmer until thick, glossy, and balanced, 12-15 minutes.
- Pan-fry the bratwurst or bockwurst in a large skillet until browned and 160F inside, 8-10 minutes.
- Slice the sausages, spoon the hot curry sauce over them, and dust with extra curry powder to taste right before serving.
