Coconut-Lime Red Curry Dumpling Bake
Frozen dumplings bake in a fragrant coconut-red-curry sauce with ginger, lime, and spinach, emerging tender underneath with lightly crisped pleats and fresh herbs.

Ingredients
Coconut Curry Sauce
- 1 can (14 ounces) full-fat coconut milk
- 2 tablespoons Thai red curry paste
- 2 teaspoons soy sauce, plus more to taste
- 1 tablespoon finely grated fresh ginger
- 2 garlic cloves, finely grated
- 1 teaspoon light brown sugar
- 1 teaspoon finely grated lime zest
Dumplings and Finish
- 24 medium frozen uncooked pleated dumplings, 0.85 to 1.15 ounces each, potsticker or gyoza style, labeled for steaming from frozen
- 5 ounces baby spinach
- 2 tablespoons fresh lime juice
- 3 scallions, thinly sliced
- 1/2 cup cilantro leaves and tender stems
Directions
Build the Sauce
- Heat the oven to 400°F / 200°C. Whisk the coconut milk, thai red curry paste, soy sauce, ginger, garlic cloves, brown sugar, and lime zest until completely smooth.
- Spread the fresh spinach in a 9-by-13-inch shallow baking dish and pour over the sauce. Arrange the frozen dumplings in one snug layer, flat sides down, keeping pleated tops above the liquid.
Steam-Bake and Brown
- Cover tightly with aluminum foil and bake for 18 minutes. Uncover carefully, rotate the dish, and bake for 8 to 12 minutes more, until the sauce bubbles, exposed wrapper edges begin to brown, every wrapper is tender where submerged, and the center dumpling reaches 165°F / 74°C. If the wrappers are still tough, re-cover and bake in 3-minute increments.
Brighten and Serve
- Rest for 5 minutes. Stir the lime juice into the sauce around the dumplings, then taste and add more soy sauce only if needed. Scatter with the scallions and cilantro and serve while the pleats remain lightly crisp.
