Classic Peanut Butter Cookies

Ingredients
Cookie Dough
- 1/2 cup unsalted butter, softened
- 3/4 cup smooth conventional peanut butter
- 1/2 cup packed light brown sugar
- 1/2 cup granulated sugar, divided
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon fine sea salt
Directions
Mix and Chill
- Beat the butter, peanut butter, brown sugar, and 6 tablespoons granulated sugar until smooth, about 2 minutes. Beat in the egg and vanilla.
- Whisk the flour, baking soda, and salt, then mix into the peanut mixture just until uniform. Chill 30 minutes.
Press and Bake
- Heat the oven to 350°F / 175°C and line two sheets. Scoop 24 portions, about 30 g each (a heaping tablespoon), and roll into balls. Dip a fork in the remaining sugar and press each ball twice at right angles to 1/2 inch thick.
- Bake one sheet at a time until the rims are light gold and centers look dry, 10 to 12 minutes. Cool on the sheet 7 minutes before transferring to a rack.
