Chole Bhature
Tea-darkened chickpeas simmer into spiced chole beside puffed, tender-crisp bhature fried fresh from rested yogurt dough.

Ingredients
Chole
- 2 cups dried chickpeas
- 8 cups water
- 2 black tea bags
- 1 tsp kosher salt, for cooking chickpeas
- 3 tbsp ghee
- 1 tsp cumin seeds
- 1 large red onion, finely chopped
- 2 tbsp ginger-garlic paste
- 2 green chiles, slit
- 1 cup crushed tomatoes
- 2 tbsp chole masala
- 1 tsp ground coriander
- 1 tsp amchur
- 1/2 tsp Kashmiri chile powder
- 1 tsp kosher salt, for masala
- 1/2 tsp garam masala
Bhature
- 3 cups all-purpose flour
- 1/4 cup fine semolina
- 1 tsp sugar
- 1 tsp kosher salt
- 1/2 tsp baking powder
- 1/2 cup plain whole-milk yogurt
- 3/4 cup warm water, plus more as needed
- 1 tbsp avocado oil, for dough
- 6 cups avocado oil or other neutral frying oil, for deep-frying
Directions
Soak the Chickpeas
- Soak the dried chickpeas in plenty of water for 12 hours, then drain.
Mix and Rest the Bhature Dough
- Combine the all-purpose flour, fine semolina, sugar, kosher salt, baking powder, plain whole-milk yogurt, warm water, and avocado oil into a smooth, soft dough. Cover and rest for 2 hours.
Cook and Finish the Chole
- Cook the soaked chickpeas with the water, black tea bags, and first kosher salt until tender, 30-35 minutes in a pressure cooker with natural release. Discard the tea bags and reserve the cooking liquid.
- Heat the ghee in a Dutch oven. Add the cumin seeds, then the red onion, and cook until deep golden, 12-15 minutes.
- Add the ginger-garlic paste and green chiles and cook for 1 minute. Add the crushed tomatoes, chole masala, ground coriander, amchur, Kashmiri chile powder, final kosher salt, and garam masala. Cook until the fat separates, 10-12 minutes.
- Add the chickpeas and 2 cups reserved cooking liquid. Simmer, mashing some chickpeas against the pot, until thick, 20-25 minutes.
Roll and Fry the Bhature
- Divide the dough into 12 pieces and roll into ovals. Heat the frying oil to {{temperature:350°F}} and fry until puffed and golden, 45-60 seconds per side.
