Buttermilk Fried Chicken and Waffles
Chicken and waffles with buttermilk fried chicken, crisp waffles, maple syrup, hot sauce, and honey butter.

Ingredients
Chicken
- 3 lb bone-in chicken thighs and drumsticks
- 2 cups buttermilk
- 2 tbsp hot sauce
- 2 tbsp Diamond Crystal kosher salt, use 1 tbsp Morton kosher salt if substituting by volume
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 6 cups avocado oil, for frying
Waffles
- 2 cups all-purpose flour
- 2 tbsp granulated sugar
- 1 tbsp baking powder
- 1 tsp kosher salt
- 2 large eggs, separated
- 1 3/4 cups buttermilk
- 6 tbsp unsalted butter, melted
- 1 tsp vanilla extract
Directions
Method
- Marinate chicken in buttermilk, hot sauce, and kosher salt for 12 hours; use half as much salt by volume if using Morton kosher salt.
- Whisk flour, cornstarch, black pepper, paprika, and cayenne pepper in breading dishes. Dredge drained chicken, rest the coating for 10 minutes, then dredge again for a craggy crust.
- Heat avocado oil to 325F and fry the chicken until deep golden and 175F at the bone, 14-16 minutes. Drain on a wire rack.
- Whisk flour, granulated sugar, baking powder, and kosher salt. Separate eggs, then whisk the yolks with buttermilk, unsalted butter, and vanilla extract before combining with the dry ingredients.
- Beat the egg whites to soft peaks and fold them gently into the waffle batter so the waffles cook light instead of dense.
- Cook waffles in a hot waffle iron until crisp and browned. Serve immediately with fried chicken, keeping syrup, hot sauce, and honey butter on the side.
