Chewy Homemade Granola Bars
Toasted oats, walnuts, raisins, and crisp rice bind into chewy homemade granola bars with honey-maple depth, cinnamon warmth, and clean sliceable edges.

Ingredients
Oat Mixture
- 3 cups old-fashioned rolled oats, divided
- 1 cup walnuts, chopped small
- 3/4 cup raisins, chopped if large
- 1 cup crisp rice cereal
- 1 teaspoon ground cinnamon
- 1/2 teaspoon fine sea salt
Binder
- 6 tablespoons unsalted butter
- 1/3 cup honey
- 1/4 cup pure maple syrup
- 1/3 cup packed light brown sugar
- 1 teaspoon vanilla extract
Directions
Toast and Prepare
- Heat the oven to 350°F / 175°C. Spread 2 1/2 cups oats and the walnuts, on a sheet; toast until the nuts deepen slightly in color and smell toasted, with no bitter or scorched aroma, 8 to 10 minutes.
- Grind the remaining 1/2 cup oats to a coarse flour. Combine all oats and walnuts with the raisins, crisp rice, cinnamon, and salt. Line a 9-by-13-inch pan with a foil sling and lightly grease the foil.
Bind and Bake
- Melt the butter, honey, maple syrup, and brown sugar in a saucepan. Simmer, stirring, for 2 minutes, remove from heat, and stir in the vanilla.
- Pour over the oat mixture and fold until every piece glistens. Press very firmly and evenly into the pan. Bake until the edges are amber, 20 to 24 minutes.
Score and Cool
- Cool 5 minutes, score into 16 bars, and cool completely in the pan, about 1 hour. Lift out and cut through the score lines with a bench scraper.
