Cha Yen (Thai Iced Tea)
Strong Thai tea mix sweetened with condensed milk, poured over crushed ice, and capped with evaporated milk for the creamy layered drink called cha yen.

Ingredients
Sweet Tea Base
- 1/4 cup loose Thai tea mix
- 4 cups water
- 1/3 cup granulated sugar
- 1/2 cup sweetened condensed milk
To Serve
- 6 cups crushed ice
- 1/2 cup evaporated milk, chilled
Directions
Brew Strong Tea
- Bring the water to a boil, remove from the heat, stir in the Thai tea mix, cover, and steep for 5 minutes.
- Immediately strain through a very fine sieve or cloth filter into a heatproof bowl. Do not press leaf sediment through.
Sweeten and Chill
- While hot, whisk in the granulated sugar and sweetened condensed milk until completely smooth. Cool for 20 minutes, cover, and refrigerate for at least 40 minutes, until cold.
Layer Over Ice
- Pack four 18- to 20-ounce tall glasses with the crushed ice. Pour in the tea base, leaving 1 inch at the top, then slowly float the evaporated milk over the ice. Serve at once and stir before drinking.
