Cachaça’s grassy character meets lime oils, juice, and cane sugar in a direct built drink. Gentle muddling extracts aromatic peel oil without crushing bitter white pith.

- 1 small thin-skinned lime
- 2 teaspoons (8 g) superfine cane sugar
- 2 ounces (60 ml) cachaça
- Cracked ice, enough to fill the glass
Directions
Method
- Trim the lime ends, halve lengthwise, remove the thick central white core, and cut into 8 pieces.
- Put lime and sugar in a double rocks glass. Press gently 5 or 6 times with the end of a wooden spoon, just until juicy and fragrant.
- Fill with cracked ice, add cachaça, and churn until the glass is cold and sugar mostly dissolves.
