Fluffy Buttermilk Pancakes
Tender buttermilk pancakes with lofty centers, browned edges, and a lightly tangy crumb.

Ingredients
Batter
- 2 cups, spooned and leveled

- 2 cups, well shaken

- 2 tsp, for griddle, as needed
Directions
Mix the Batter
- Whisk all purpose flour, granulated sugar, baking powder, baking soda, and fine salt in a large bowl.
- In a second bowl, whisk buttermilk, egg, unsalted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients and fold just until no large dry streaks remain. Small lumps are good. Rest for 10 minutes.
Cook the Pancakes
- Heat a griddle over medium heat to about 350°F. Lightly grease with avocado oil.
- Pour 1/4 cup batter per pancake. Cook for 2 to 3 minutes, until bubbles form and the edges look set.
- Flip once and cook for 1 to 2 minutes, until golden and springy in the center. Serve hot.
